Home-style meatloaf by Betty Crocker and classic mini meatloaves from Hunt's are both easy meatloaf recipes. Each has a prep time of 20 minutes or less and no more than seven ingredients.
To make Betty Crocker's meatloaf, combine 2 beaten eggs, 1/2 cup each of ketchup and milk, 1 cup of bread crumbs, 1/4 cup of finely chopped onion and 1 pound of ground beef in a large bowl. Transfer the meat mixture to an 8-inch by 4-inch loaf pan. Reserve another 1/4 cup of ketchup for the topping.
Preheat the oven to 350 degrees Fahrenheit. Bake for 40 minutes. Remove the meatloaf from the oven, and spread 1/4 cup of ketchup over it. Put the meatloaf back into the oven, and bake it until an inserted meat thermometer reads 160 degrees Fahrenheit, about 15 to 20 additional minutes. Let the meatloaf rest for 10 minutes before serving.
To make Hunt's mini meatloaves, add 1 pound of ground beef, 1 8-ounce can of no-salt-added tomato sauce, 1/4 cup of Egg Beaters, 1/2 cup of quick cooking rolled oats and 2 tablespoons of dry onion soup mix to a bowl. Mix until blended.
Preheat the oven to 375 degrees Fahrenheit. Line a shallow baking pan with foil, and spray the foil with cooking spray. Divide the mixture into four even portions, and shape each into loaves roughly 4 inches by 3 inches. Spread 1/4 cup of ketchup over the meatloaves. Bake them for 25 minutes or until their internal temperature reaches 160 degrees Fahrenheit. Let them stand for at least five minutes before serving.
