To make Ellie Krieger?s grilled pineapple recipe, cut off the top and bottom of a 3- to 4-pound pineapple. Peel, and cut it crosswise into 8 rings, each about 1/2 inch wide. Remove the center core of each ring. Coat a large grill pan with cooking spray, and heat on medium. Grill each pineapple slice 2 to 3 minutes per side, until grill marks appear.
Heat 2 teaspoons butter, 1/4 cup brown sugar and 1/4 cup rum in a saucepan on low heat, stirring until the sugar dissolves and the sauce thickens slightly. Remove from heat. Place a pineapple ring on each plate, add a scoop of vanilla ice cream in the center and drizzle with about 2 teaspoons sauce. This recipe makes 8 servings.
Martha Stewart?s rum punch recipe makes 10 servings. Combine 8 cups apple cider, 1 thinly sliced apple, 1 thinly sliced orange, 2 cinnamon sticks and a 1-inch piece of peeled and thinly sliced ginger in a large pot. Bring to boil on high heat, then reduce heat and simmer for 5 minutes. Keep punch warm on low heat for up to 2 hours, if desired.
Remove from heat, and stir in 2 cups dark rum. Serve warm from punch bowl.
