Fruit jellies, peppermint candies and caramels are all easy recipes for homemade candy. Peppermint candies and caramels have a chewy consistency due to the corn syrup in them, whereas fruit jellies are gummy in texture due to the gelatin they contain.
To make fruit jellies, add 1 ounce of gelatin to 2/3 cup of fruit juice and let stand for five minutes. Boil 2/3 cup of fruit juice and 1 1/2 cups of sugar for five minutes. Add 2 cups of jam and cook for two minutes.
Stir in the gelatin mixture and cook until smooth. Pour the mixture through a sieve into a baking dish and refrigerate for three hours. Cut the jelly into 1-inch squares and coat the squares in sugar.
To make peppermint candies, cook 3 1/2 cups of powdered sugar with 3 tablespoons of water and 3 tablespoons of light corn syrup in a saucepan over low heat until smooth. Remove from heat and add 1/8 teaspoon of peppermint extract and 2 drops of food coloring. Place the pan in hot water and drop teaspoonfuls of the mixture onto cookie sheets lined with wax paper. Decorate and let stand for 24 hours.
To make chewy caramels, cook 1 cup of melted butter, 2 1/4 cups of brown sugar, 1 can of sweetened condensed milk and 1 cup of dark corn syrup. Once a candy thermometer reads 250 degrees F, pour the mixture into a pan lined with greased foil. Cool completely before cutting.
