Herb-crusted turkey breast can be oven-grilled over white wine for increased flavor. Another grilling recipe calls for marinating the turkey breasts in a spice mixture before grilling them.
Mix 1 tablespoon minced garlic and 2 teaspoons dry mustard with 1 tablespoon each chopped fresh rosemary, sage and thyme. Add salt and pepper to taste. Add 2 tablespoons each of olive oil and lemon juice.
Place a turkey breast on the rack in a grill pan, and loosen the skin. Spread half the paste under the skin and the remaining paste on top of the skin. Pour 1 cup of white wine into the bottom of the pan. Roast at 325 F for 105 to 120 minutes. The turkey breasts can also be cooked on a grill.
Another option is marinating the turkey breast. To make the marinade, combine 1 tablespoon each of basil, oregano and parsley with 1 teaspoon each white pepper and paprika. Add 1/2 teaspoon of onion powder and 2 tablespoons of olive oil. Rub the mixture over two boneless, skinless turkey breasts, and let them marinade for at least an hour.
Season the turkey breasts with salt, and place on a grill preheated to high. Sear for 5 to 8 minutes. Turn the turkey breasts over to a cooler part of the grill. Cover and cook until the internal temperature reads 160 F.
