Some easy recipes for Greek spinach squares are Kraft's Greek spinach and cheese quiche squares, as well as spanakopita, or Greek spinach pie. Start making Greek spinach and cheese quiche squares by brushing a square baking dish with 1 tablespoon of butter and beating together 3 eggs, 1 cup of flour, 1 cup of milk and 1 teaspoon of baking powder.
Fold 2 10-ounce packages of thawed and drained frozen chopped spinach, 2 4-ounce packages of feta cheese, 1 8-ounce package of shredded cheddar cheese and 1 tablespoon of dried minced onion into the egg and flour mixture. Pour the mixture into the baking dish, and cook the spinach squares at 350 degrees Fahrenheit for 35 minutes. After removing the dish from the oven, allow the spinach squares to stand for 15 minutes before serving.
To make traditional Greek spinach pie, saute 1 chopped onion, 1 chopped bunch of green onions and 2 minced garlic cloves in 3 tablespoons of olive oil at medium heat. Once the vegetables are browned, add 2 pounds of chopped spinach and 1/2 cup of chopped fresh parsley until wilted, and remove the pan from the heat. In a bowl, combine 2 eggs, 1/2 cup of ricotta cheese and 1 cup of crumbled feta cheese, and mix in the spinach mixture.
In a greased square baking pan, lay 4 sheets of phyllo dough, brushing each with olive oil. Spoon the spinach mixture over the top, and then add another 4 sheets of phyllo on top. Bake the pie at 350 F for 30 to 40 minutes.
