To make country onion soup, heat 1/4 cup of olive oil in a large soup pot. Add 2 pounds of thinly sliced yellow onions and 1 teaspoon of kosher salt. Cook the onions for 10 minutes, or until they soften. Cut 4 ounces of a cured meat such as speck, prosciutto, smoked bacon or ham into matchsticks, and add it to the pot. Push the meat and the onions to the sides, and add 2 tablespoons of flour. Allow the flour to toast for 1 or 2 minutes, then mix it with the onions. Raise the heat to high, and pour in 2 cups of dry white wine. Allow the wine to come to a boil, then add 2 quarts of water. Melt 3 tablespoons of butter in a saucepan before adding 1/4 teaspoon of salt and 1 cup of loosely packed mint leaves. Add the string beans, and cook for one minute.
