For mint string beans, add 1 pound of trimmed string beans to a pot of boiling water. Cook the beans for about 10 minutes, or until they become tender. Remove them to a bowl of cold water. Melt 3 tablespoons of butter in a saucepan before adding 1/4 teaspoon of salt and 1 cup of loosely packed mint leaves. Add the string beans, and cook for one minute.
