To make Daphne's rice, choose a microwaveable bowl that is large enough to serve the meal. Combine 3 cups of water, 1 teaspoon of salt, a dash of black pepper and 1 teaspoon of dried Mexican oregano. Add 1 teaspoon of cumin and 1 tablespoon of unsalted butter. Insert a pinch of coriander, cayenne, and turmeric. Stir in 1 1/2 cups of uncooked long-grain rice. Place a paper towel over the bowl, and microwave on high for 20 minutes. Remove the bowl with potholders, fluff with a fork, and serve.
Michael Symon's cutlets are made with 12 4-ounce turkey cutlets and a 9-ounce sliced ham. Lay the cutlets on a piece of plastic wrap, and top with 24 sage leaves. Add another piece of plastic wrap, and pound to 1/4 inch thickness. Saute in hot oil and butter over medium heat for about two to three minutes or until golden brown. Flip the cutlets, and continue cooking for another three minutes. Remove the cutlets to a platter. Add 3 cups of chicken stock to the same saute pan, along with 6 sprigs of thyme. Reduce the stock for two minutes, and add 3 tablespoons of butter. When the butter has melted, remove the thyme sprigs, and pour the stock over the cutlets on the platter. Serve immediately.
