Two easy recipes featuring scallops are AllRecipe.com's easy garlic-lemon scallops and MyRecipes.com's Cajun scallops. The AllRecipe.com scallop dish uses only six ingredients and takes 10 minutes to prepare. MyRecipes.com's Cajun scallops have a bit more ingredients, but everything is cooked in one pan.
For AllRecipes.com's easy garlic-lemon scallops, heat 3/4 cup butter in a large skillet over medium-high heat until melted. Add 3 tablespoons minced garlic and cook until the garlic aroma is noticeable. Place 2 pounds large sea scallops into the butter and garlic mixture and cook for a few minutes on one side. Flip the scallops over and cook on the other side until they are solid and opaque.
Take the scallops out of the pan, then add 1 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons lemon juice to the butter. Serve the scallops on a platter with the sauce poured over them.
To make MyRecipes.com's Cajun scallops, heat 1 teaspoon olive oil over high heat in a cast-iron skillet, then add a thinly sliced onion, 1 teaspoon Cajun seasoning and 1/2 teaspoon pepper. Cook for three minutes, then stir in 1 teaspoon butter and a garlic clove and cook for 30 seconds. Add 3/4 pound scallops to the pan and cook for one minute. Top the scallops with 1 to 2 teaspoons hot sauce, flip them and cook them for three more minutes.
