Some easy recipes using a cast iron skillet include Betty Crocker’s skillet pineapple upside-down cake and The Pioneer Woman’s skillet cornbread. These recipes show that cast iron is also a good choice for the oven.
To prepare pineapple upside-down cake, start by preheating the oven to 350 degrees Fahrenheit. Melt 3 tablespoons of butter and place in the skillet. Sprinkle 1/2 cup of packed brown sugar over the butter. Arrange 12 pineapple slices along the bottom and sides of the pan, cutting the slices in half so they fit the sides. Place a maraschino cherry with the stem removed in the center of each slice.
Prepare the cake mix per the package directions, substituting pineapple juice from the slices for the water. Place the skillet in the oven and bake until the center of the cake tests done.
For skillet cornbread, preheat the oven to 450 degrees Fahrenheit. Add 1 cup of cornmeal, 1/2 cup of flour, 1 teaspoon of salt, 1/2 teaspoon baking soda and 1 tablespoon of baking powder in a large bowl, and mix well. Add 1 cup of buttermilk, 1/2 cup of milk, one egg and 1/4 cup of melted shortening to the bowl, and mix to form a batter.
Place 2 tablespoons of shortening in the skillet, and heat over medium heat until it is melted and hot. Pour the batter into the skillet and cook on the stovetop for one minute. Bake for 20 to 25 minutes.
