To make cheesy potatoes, use a microwave to defrost a 12 to 15 ounce bag of frozen diced hash brown potatoes in a large bowl, stirring once or twice. Remove the bowl from the microwave and add 2 cups of shredded cheese, one 16 ounce container of sour cream, 1 can of condensed cream of mushroom soup, 1/4 cup of chopped onion and 1/4 cup of melted butter. Season with salt and pepper, stir, and pour into a greased baking dish. Bake at 350 degrees Fahrenheit for 30 to 45 minutes.
To make potato casserole, peel and slice 3 medium russet potatoes and place 1/3 of them in the bottom of a greased baking dish. Add a layer of shredded sharp white cheddar cheese and a layer of grated Parmesan. Repeat this process until the potatoes are used up. Pour 2 cups of heavy cream into a saucepan and add 1 minced shallot, 1 clove of garlic, some kosher salt and ground pepper. Simmer while stirring over medium heat until the liquid begins to thicken.
Pour the hot liquid over the potato layers, top with some more shredded cheese, and cover the dish with foil. Bake at 375 degrees Fahrenheit for one hour before removing the foil and allowing the casserole to bake for another 15 to 20 minutes.Learn more about Vegetables
