One easy recipe is the cheesy potatoes from Pillsbury, which calls for frozen hash browns. Another is the potato casserole from Food Network, which requires fresh sliced potatoes.
To make cheesy potatoes, use a microwave to defrost a 12 to 15 ounce bag of frozen diced hash brown potatoes in a large bowl, stirring once or twice. Remove the bowl from the microwave and add 2 cups of shredded cheese, one 16 ounce container of sour cream, 1 can of condensed cream of mushroom soup, 1/4 cup of chopped onion and 1/4 cup of melted butter. Season with salt and pepper, stir, and pour into a greased baking dish. Bake at 350 degrees Fahrenheit for 30 to 45 minutes.
To make potato casserole, peel and slice 3 medium russet potatoes and place 1/3 of them in the bottom of a greased baking dish. Add a layer of shredded sharp white cheddar cheese and a layer of grated Parmesan. Repeat this process until the potatoes are used up. Pour 2 cups of heavy cream into a saucepan and add 1 minced shallot, 1 clove of garlic, some kosher salt and ground pepper. Simmer while stirring over medium heat until the liquid begins to thicken.
Pour the hot liquid over the potato layers, top with some more shredded cheese, and cover the dish with foil. Bake at 375 degrees Fahrenheit for one hour before removing the foil and allowing the casserole to bake for another 15 to 20 minutes.
Easy Cheesy Potatoes

- 32-oz. package of frozen potatoes
- 1 package shredded cheddar/Jack cheese blend
- 1/2 cup crumbled cooked bacon (optional)
- 1/2 cup scallions, thinly sliced (optional)
- Nonstick cooking spray
- Salt or no-salt seasoning, to taste
- Ground black pepper, to taste
- Sour cream for garnish (optional)
Step 1: Preheat the oven to 450 F. Spray a large skillet with the nonstick cooking spray. Heat the pan using medium heat and add the potatoes. Cook using medium heat for 10 minutes, stirring frequently. Season the potatoes with no-salt seasoning or salt and black pepper to taste.
Step 2: Transfer the potatoes to a baking or casserole dish and top with the cheese and bacon, if desired. Bake at 450 F for about 5 minutes. After 5 minutes, sprinkle the scallions on top and return to the oven for another few minutes, melting the cheese on top.
Step 3: When the cheese has melted, remove from the oven. Serve hot with sour cream as a garnish, if desired.
