One easy way to make candied yams is to boil and slice fresh yams, then cook them in a skillet with brown sugar, butter and a marshmallow topping. Alternatively, you can make candied yams in an oven using canned yams.

To make candied yams, boil approximately 2 pounds of yams or sweet potatoes until they are tender. Drain the potatoes, then allow them to cool slightly before slipping the skins off. Cut them into 1/2-inch-thick pieces and set them aside. In a large skillet, heat 1/3 cup of packed brown sugar, 3 tablespoons of butter or margarine, 3 tablespoons of water or cream and 1/2 teaspoon of salt. Add the potatoes, and stir until they are well-glazed. Top the potatoes with a layer of miniature marshmallows if desired, then cover the skillet and allow the marshmallows to melt slightly before serving.

Alternatively, you can make candied yams by scooping a can of yams or sweet potatoes into the bottom of a baking dish. Top this with 1/4 cup of butter, cut into small pieces. Sprinkle about 1/2 cup of brown sugar over the top and then add a layer of miniature marshmallows. Bake for approximately 25 minutes in an oven at 400 degrees Fahrenheit.
