Easy recipes for electric skillets include roast beef and chicken chow mein. For the beef, preheat the skillet to 400 degrees Fahrenheit, and then add 1 tablespoon vegetable oil and one 3- to 4-pound roast. Brown the meat.

Add one 16-ounce undrained can of bean sprouts, one 8-ounce can of undrained mushrooms, two 8-ounce cans of sliced water chestnuts, 2 cups of sliced celery and 1 cup of sliced onion. Turn the heat down, cover and simmer for 20 minutes. Combine 1/3 cup of soy sauce and 3 tablespoons of cornstarch. Stir into the chow mein until thickened. Serve over rice or chow mein noodles.
