Quaker Oats has a recipe for vanishing oatmeal cookies. This recipe makes four dozen cookies and takes 20 minutes to prepare and eight minutes to cook. To make these cookies, set the oven to 350 degrees.
In a large bowl, beat 6 tablespoons of butter, 3/4 cup of brown sugar and 1/2 cup of white sugar on medium speed. Add 2 eggs and 1 teaspoon of vanilla, and then beat well. When mixed, add 1 1/2 cup of flour, 1 teaspoon each of baking soda and ground cinnamon and an optional 1/2 teaspoon of salt. When mixed, add 3 cups of oats and 1 cup of raisins. For some variation, add a cup of chopped nuts, a cup of chocolate chips instead of raisins or a cup of diced, dried fruit.
Thoroughly mix all ingredients, and then drop the dough onto an ungreased cookie sheet. Bake the cookies for about eight minutes or until golden brown. Allow the cookies to cool on a cookie sheet for about 1 minute, and then remove to a wire rack. When the cookies completely cool, store in a tightly covered container.
This cookie dough can also go in an ungreased baking pan to make bar cookies instead of round ones. In this case, bake the bars for about 30 minutes.
