Oatmeal butterscotch cookies is an easy to make recipe, and it uses butterscotch chips. Other simple recipes are no-bake butterscotch haystacks and chewy butterscotch brownies.
To make oatmeal butterscotch cookies combine 3/4 cup each softened butter, white sugar and packed brown sugar in a large bowl, beating well. Beat in 2 eggs and 1 teaspoon vanilla extract. In a separate bowl, combine 1 1/4 cups all-purpose flour, 1 teaspoon baking soda and 1/2 teaspoon each ground cinnamon and salt. Slowly pour and stir the flour mixture into the sugar mixture, and blend. Add in 3 cups rolled oats and 1 2/3 cups butterscotch chips.
Drop teaspoonfuls of cookie dough onto an ungreased cookie sheet, and bake for 10 minutes at 375 degrees Fahrenheit.
To make butterscotch haystack cookies, line a pan or tray with waxed paper. In a microwave safe bowl, combine 1 cup butterscotch chips with 1/2 cup peanut butter and 1 teaspoon shortening. Microwave at 50 percent power for one minute, and at 15 second intervals at same power level until smooth. Stir in 1 1/2 cups chow mein noodles, coating thoroughly. Drop heaping teaspoonfuls of mixture onto prepared pan, and let sit until set. Place in a tight-lidded container, and refrigerate.
Make butterscotch brownies by combining 2 1/2 cups all-purpose flour, 1 teaspoon baking powder and 1/2 teaspoon salt in a bowl. In a large bowl, beat together 1 cup softened butter, 1 3/4 cups packed brown sugar and 1 tablespoon vanilla extract. Beat in 2 large eggs, and slowly beat the flour mixture into the creamed mixture. Stir in 1 cup butterscotch chips and 1 cup chopped nuts. Spread into a greased baking pan, sprinkle 2/3 cup butterscotch chips on top, and bake for 30 to 40 minutes at 350 degrees Fahrenheit.
