Prepare Betty Crocker's thumbprint cookies by beating together 1/4 cup of packed brown sugar, 1/4 cup of shortening, 1/4 cup of softened butter, 1/2 teaspoon vanilla and 1 egg yolk. Fold in 1/4 teaspoon salt and 1 cup of all-purpose flour. Dip balls of dough into the egg white, and roll the balls in 3/4 cup of finely chopped nuts. Press a thumbprint in each ball, and bake the cookies at 350 degrees Fahrenheit for 10 minutes. Add jam or jelly to the indent once the cookies cool.
Make easy butter-and-jam thumbprint cookies by mixing the dry ingredients together, including 1 3/4 cups of all-purpose flour, 1/2 teaspoon baking powder and 1/2 teaspoon fine salt. In another bowl, cream together 3/4 cup of softened unsalted butter and 2/3 cup of sugar. Add 1 egg and 1 teaspoon of pure vanilla extract before slowly adding in the dry ingredients until just combined. Spoon out balls of dough, and roll the balls in sugar before placing them on a cookie sheet. Indent the middle of the dough with a thumbprint, fill the thumbprint with raspberry or strawberry jam, and bake the cookies at 350 degrees Fahrenheit for 15 minutes.
