The Southern Tea Cakes recipe by Paula Deen on the Food Network website is an easy recipe for tea cakes. The cakes take approximately 20 minutes to prepare and 12 minutes to cook, and the recipe makes eight to 12 dozen pieces.
To prepare the recipe, preheat the oven to 350 degrees Fahrenheit, and sift 4 cups all-purpose flour, 2 teaspoons baking powder and 1 teaspoon baking soda in a large bowl. Add 2 cups sugar, 2 eggs, 1/2 cup buttermilk, 1/2 teaspoon vanilla and 1/2 cup or two sticks of softened butter. Blend the mixture until it becomes a soft dough. Shape the dough into a flat disk on a floured surface, and wrap the disk in plastic wrap to refrigerate it for one hour.
Place the disk on a newly floured surface, and roll it out to a thickness of 1/4 inch. Use round or shaped cookie cutters to cut the dough to your desired shape, or use a knife to cut them in squares. Lightly grease a cookie sheet before adding the tea cakes and baking them for 10 to 12 minutes. When preparing the recipe, feel free to throw in additional ingredients such as chopped walnuts or ground nutmeg for some extra flavor.
