Easy Stuffed Peppers
Make up a hearty dinner of stuffed peppers with browned beef and rice tonight. A serving of one to two peppers per person makes this main course more than enough for guests.

Clean the peppers. Cut off the tops and clean out the seeds. Blanch the peppers in boiling water 5 minutes and immediately drop them in icy water to stop the cooking process.
Preheat oven to 350 degrees F. Saute the onion in the vegetable oil until soft. Mince the garlic and add in. Cook the instant rice according to package instructions.
Mix together the ground beef, rice, sauteed onions and garlic, seasoned tomato sauce, salt and pepper. Stir until everything is evenly distributed.
Grease a small baking dish. Stuff each of the peppers, until full, with the beef mixture. Place stuffed peppers into the greased dish so that they are sitting upright. Top with the can of tomato sauce. Place in the oven for about 50 minutes until cooked through.
