This easy spinach lasagna recipe combines spinach, onion, garlic, oregano and basil with fresh parsley, mozzarella, Parmesan and cottage cheese. It requires 30 minutes of preparation time and makes eight servings.
Preheat the oven to 350 degrees Fahrenheit. Sauté 2 10-ounce packages of frozen chopped spinach, 1/2 of a chopped onion, 1/2 teaspoon of dried oregano, 1/2 teaspoon of dried basil and 2 cloves of crushed garlic in 1 tablespoon of olive oil in a large pan over medium heat. Add a 32-ounce jar of spaghetti sauce and 1 1/2 cups of water. Simmer for 20 minutes.
In a large bowl, combine 2 cups of cottage cheese, 1/2 cup of shredded mozzarella cheese, 1/4 cup of grated Parmesan cheese and 1/2 cup of chopped fresh parsley in addition to 1 teaspoon of salt, 1/8 teaspoon of ground black pepper and 1 egg.
Spoon a thin layer of the spaghetti sauce mixture into a rectangular baking dish. Cover the sauce with 4 uncooked lasagna noodles. Spoon another thin layer of spaghetti sauce over the top of the pasta. Cover with 4 more uncooked noodles. Cover the noodles with half of the spaghetti sauce, then cover the sauce with half of the cheese mixture. Add another layer of 4 uncooked lasagna noodles, and repeat the layering of sauce and cheese. Finish with a layer of spaghetti sauce. Cover the baking dish with aluminum foil, and bake for 55 minutes. Remove the foil cover, and bake for another 15 minutes to brown the top of the lasagna. Allow the dish to sit for 10 minutes prior to serving.
