To make Martha Stewart's Easiest Spaghetti and Meatballs, mix together 1/4 cup grated Parmesan cheese, 1/4 cup chopped fresh parsley, two minced cloves of garlic, an egg, and 1 teaspoon salt and pepper. Stir in 1 pound ground beef chuck and 1/4 cup dried breadcrumbs. Form the mixture into about 16 meatballs. Heat 1 tablespoon olive oil over medium heat in a large, heavy pot. Place the meatballs in the pot, and cook for about eight to 10 minutes, until browned.
Once the meatballs are browned, add a 28-ounce can of crushed tomatoes. Bring the mixture to a boil, then reduce to a simmer. Partially cover the pot and cook for about 10 to 12 minutes. At the same time, cook 3/4 pound spaghetti in a pot of boiling salted water until al dente. Drain the pasta, then toss with the meatballs and sauce. Serve the spaghetti and meatballs with additional Parmesan cheese.
To make a sauce for the spaghetti and meatballs with more flavor, add 2 tablespoons extra-virgin olive oil, 1/2 teaspoon crushed red pepper, four chopped and crushed garlic cloves, and a small chopped onion to a heated skillet or pot. Cook until the onions are soft, about five to seven minutes. Add in 1 cup beef stock, a 28-ounce can of crushed tomatoes, a handful of chopped parsley and 10 torn basil leaves. Bring the sauce to a boil, then simmer for about 10 minutes.
