An easy recipe for sourdough bread is basic sourdough made from sourdough starter, bread flour and salt. The necessary sourdough started calls for flour, sugar, yeast and warm water. Another easy recipe is extra-tangy sourdough bread from King Arthur Flour.
Start a day in advance by whipping up the sourdough starter. Stir 1 1/2 tablespoons of active dry yeast and 1 teaspoon of sugar in 3 cups of warm water. Once the yeast becomes foamy, work in 3 cups of all-purpose flour. Cover the dough with a towel, and allow to rise for 8 to 12 hours. If you are not going to make the bread right away, cover the starter and refrigerate it.
Using a mixer with a dough hook, combine 2 cups of bread flour with 1 1/2 cups of sourdough starter and 3/4 teaspoon of salt. Once the dough no longer sticks to the bowl, put it in an oiled bowl and cover with plastic wrap. Allow the dough to rise for one hour to 90 minutes. Very gently knead the dough on a lightly floured surface, form into a tight ball and cover with a towel. Allow the dough to rise again for 1 hour.
Place the dough on a preheated baking stone, cut an X on the top, and mist with water. Cook at 400 F for 60 minutes. Remove the bread from the oven, and cool it on a wire rack for 30 minutes before cutting.
