For an easy shrimp pasta recipe, gather 1 pound shrimp, four tomatoes, 1/2 cup basil, 4 ounces cream cheese and 1/4 cup shredded Italian cheese. You also need 3/4 pound fettuccine and 1/2 cup of a balsamic vinaigrette salad dressing. Prepare pasta and sauce in separate pans, then combine.
First peel and clean the shrimp, then place them in the salad dressing to marinate for roughly 20 minutes. To make this even easier, purchase pre-cleaned, frozen shrimp, and allow them to thaw before placing in the marinade. Remove the marinated shrimp from the salad dressing, and discard the latter. Heat a large skillet, and cook shrimp until the exterior turns mostly pink. Remove the shrimp, and set aside.
Cut basil, and add it to the pan along with the chopped tomatoes. For easier preparation, purchase tomatoes already diced and canned. You can use the canned juice or discard it, depending on your taste. Allow the ingredients to simmer for about three minutes, then add the cream cheese. Stir constantly until integrated, making sure the mixture does not stick to the bottom of the skillet. Once blended, add shrimp, and heat the entire dish thoroughly. Fully cooked shrimp should now appear firm and entirely pink, without translucency.
Add cooked fettuccine pasta to the skillet, and toss everything together before transferring to a platter or individual plates. Garnish with shredded Italian cheese and any remaining basil.
