An easy recipe for sauteed red cabbage includes red cabbage, shallots, salt, lemon juice and cider vinegar. Saute the red cabbage alone, or saute it with onions. The addition of raisins, onions or kielbasa is another common variation.
Core, halve and thinly slice 1 small head of red cabbage. Quarter 2 medium shallots, and separate them into layers. Heat 2 tablespoons of oil in a large non-stick saute pan over medium-high heat. Combine the shallots and the cabbage in the saute pan. Cook, stirring occasionally, for approximately 15 minutes or until softened slightly.
Stir 2 teaspoons of coarse salt, 2 tablespoons of lemon juice and 2 1/2 teaspoons of cider vinegar into the cabbage. Cook for another 10 to 12 minutes or until the cabbage wilts and the shallots are soft. Serve the cabbage as is, or stir raisins into it and serve.
To make sauteed red cabbage and onions, add 2 teaspoons of sugar and 1 red onion, peeled and chopped, to a non-stick saute pan over medium heat. Cook and stir until the onion is slightly golden-brown and tender. Transfer the caramelized onion to a dish, and set it aside. Cook the red cabbage, and add the onion to it before serving. Top the red cabbage and onions with pieces of browned kielbasa.
