Serious Eats offers an easy-to-make recipe for Ritz mock apple pie. The recipe calls for ready-made pie crusts, Ritz crackers and a spicy filling. It takes one hour and 45 minutes to prepare and feeds eight people.
To make Ritz mock apple pie, preheat oven to 425 degrees Fahrenheit. Combine 2 cups sugar, 1 3/4 cup water and 2 teaspoons cream of tartar in a saucepan, and stir until the sugar dissolves. Over high heat, bring the mixture to a boil, whisking occasionally, and then turn the heat down to medium. Simmer the mixture until it reduces to around 1 1/2 cups, which takes around 15 minutes. Stir in 2 teaspoons vanilla extract and the zest and 2 tablespoons juice from 1 fresh lemon. Set the mixture to the side.
Roll out 2 unbaked pie crusts; roll one to around 11 inches in diameter for the bottom crust, and roll the other to about 10 inches in diameter for the top crust. Place the bottom crust in a pie dish, and top with 36 coarsely crumbled Ritz crackers. Pour the filling mixture over the crackers, and dot the pie with 2 tablespoons of unsalted butter, cut into small pieces. Sprinkle 3/4 teaspoon of ground cinnamon over the pie.
Beat 1 egg and 1 tablespoon milk in a small bowl. Add the top crust to the pie, sealing and fluting the edges. Brush the egg mixture on the top crust, and then sprinkle 1 tablespoon of sugar across the top. Cut slits in the top of the pie for steam venting. Bake until golden brown, or around 30 minutes.
