Remoulade Sauce

This recipe produces 3 cups of sauce that can be used atop shrimp as a garnishing sauce. It is rated at an easy level for cooks. Originally from France, remoulade is a sauce that uses two types of mustard, grain mustard and regular. Creole whole grain mustard can be purchased premade in a jar from most grocery stores. It imparts a strong and unique flavor due to the presence of vinegar and brown mustard seed.

  • 1/4 cup fresh lemon juice
  • 3/4 cup vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green onion
  • 1/4 cup chopped celery
  • 2 tablespoons chopped garlic
  • 2 tablespoons horseradish
  • 3 tablespoons Creole whole grain mustard
  • 3 tablespoons yellow mustard
  • 3 tablespoons ketchup
  • 3 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon ground black pepper

Process all ingredients in the bowl of the food processor for about 30 seconds, until all combined. It can be used right away or stored in the refrigerator.
