Taking only 10 minutes to prepare, the Libby's pumpkin muffin recipe is easy to make. The recipe makes 30 regular muffins, 72 mini muffins or 12 jumbo muffins. Some ingredients include flour, eggs, pumpkin, vegetable oil and sugar.
To make Libby's pumpkin muffins, combine 3 cups of all-purpose flour, 1 tablespoon plus 2 teaspoons of pumpkin pie spice, 2 teaspoons of baking soda and 1 1/2 teaspoons of salt in a bowl. In another bowl, beat 3 cups of sugar, a 15-ounce can of pumpkin, 4 large eggs, 1/2 cup of vegetable oil and 1/2 cup water or orange juice until blended. Add the dry ingredients to the wet ingredients, and stir until moistened.
Spoon the batter into paper-lined or greased muffin cups. Fill each cup around 3/4 full. Bake in a 350 F oven until a toothpick inserted into the muffins comes out clean. Regular muffins usually bake for 25 to 30 minutes, mini muffins bake for about 15 to 17 minutes, and jumbo muffins bake for 33 to 36 minutes.
Allow the muffins to cool in the pan for 10 minutes, then remove them and place on a wire rack to cool thoroughly. To keep muffins fresh, store them in an airtight container or sealed plastic bag.
