To make a quick and easy poutine, bake one bag of frozen French fries according to the instructions on the package. Then, heat one can of premade gravy in the microwave as instructed. Place as many cheese curds as you desire on a plate, and microwave them for five to 10 seconds. Layer the fries, gravy and cheese on a large plate, and serve.
To make braised beef poutine, season 4 to 6 boneless beef short ribs with salt and pepper. Sear the ribs in a Dutch oven for five to seven minutes, and then add 1 diced onion, 1 diced carrot and 1 diced celery stalk. Cook until the vegetables are caramelized, remove the pot from the heat, and transfer the meat and vegetables to a plate.
Return the pan to the heat, and deglaze it with 1 bottle of red wine. Cook for two minutes, scraping the bottom of the pot to loosen the remaining beef and vegetable bits. Add the beef, vegetables, 2 cups beef broth, 1 bay leaf, 1 star anise and 1 clove to the pot. Place in a 300-degree oven and cook for two to three hours.
Remove the vegetables and meat from the pot. Discard the vegetables, but shred the beef and return it to the pot. Ladle the beef and vegetables over prepared French fries, top the dish with cheese curds, and place it under the broiler for about three minutes to melt the cheese curds slightly.
