The cheesy potato casserole from FoodNetwork is a good recipe that is also easy to make. It uses russet potatoes, cheese, garlic, heavy cream, a shallot, butter and seasonings.
To make cheesy potato casserole, sprinkle a bit of minced shallot into a buttered 2-quart baking dish. Peel and slice 3 medium russet potatoes and place 1/3 of them in the bottom of the baking dish. Cover the potato layer with a layer of cheddar cheese and a sprinkling of Parmesan cheese. Repeat these layers two more times.
To a medium saucepan, add 2 cups of heavy cream, a minced shallot (minus the portion already sprinkled in the baking dish), 1 minced clove of garlic and some salt and pepper to taste. Simmer over medium heat for approximately 2 to 3 minutes, stirring constantly, until the liquid begins to thicken.
Pour the hot liquid over the potatoes, then cover them with cheddar cheese and cover the baking dish with aluminum foil. Bake for one hour in a 375 degree Fahrenheit oven before removing the foil and baking for an additional 15 to 20 minutes or until the cheese is golden brown. Allow the casserole to sit for ten minutes before slicing and serving.
