Easy Pepper Jelly
For a biscuit topping that packs a bit of a punch in the mornings, make this mildly hot and sweet pepper jelly.

- 3/4 cup green bell pepper
- 1/4 cup hot green pepper
- 1 1/2 cup apple cider vinegar
- 6 cups sugar
- 4 ounces pectin
- Green food coloring
- Process the peppers in a blender
- Heat and add vinegar and sugar
- Add the rest of the ingredients and store for later use
Process the green bell pepper and the hot green pepper in a blender until the mixture is nearly smooth with only small chunks. It may be easier to chop the peppers ahead of time to fit them all into the processor.
Place the pepper mixture into a saucepan. Mix with the vinegar and sugar. Bring to a rolling boil and stir until the sugar is completely dissolved in the solution. Boil for at least 1 minute before removing from heat.
Stir in the pectin and four drops of green food coloring. Keep mixing until well combined. The jelly will still be liquid. Pour into sterilized jam containers. Seal the jars using proper canning techniques.
