Alton Brown's peanut butter fudge is an easy peanut butter fudge recipe. Another easy recipe is Jif's peanut butter fudge, which takes 12 minutes to prepare and 10 minutes to cook.
To make Alton Brown's recipe, combine 8 ounces of unsalted butter and 1 cup of smooth peanut butter in a 4-quart microwavable bowl. Cover it with plastic wrap, and microwave it for two minutes on high. Stir it, and microwave it for an additional two minutes. Add in 1 teaspoon of vanilla extract and 1 pound of powdered sugar, and stir to combine. Spread the mixture into a buttered pan lined with parchment paper, refrigerate it for two hours, and cut the fudge into 1-inch pieces.
To make the Jif recipe, combine 3 cups of sugar, 1/2 cup of butter and 2/3 cup of evaporated milk in a saucepan. Stir the mixture constantly over medium heat until it comes to a boil, reduce the heat, and let it simmer for five minutes while continuing to stir. Add 1 2/3 cups of Jif creamy peanut butter, and stir until well blended. Add 1 jar of marshmallow creme and 1 teaspoon of vanilla extract, and beat until well blended. Spread the mixture into a pan lined with aluminum foil and sprayed with no-stick cooking spray, let it cool, and cut it into pieces.
