To make an easy peach cobbler, stir 1 cup of a premixed baking mix such as Bisquick together with 1 cup milk, 1/2 teaspoon nutmeg and 1/2 cup melted butter in a baking dish. In a separate bowl, combine 1 can of drained sliced peaches with 1 cup granulated sugar.
Spoon the sweetened peaches over the batter. Bake the cobbler uncovered for 50 to 60 minutes at 375 F, or until the top is golden. Serve the peach cobbler warm or at room temperature. Alternatively, serve the peach cobbler with a scoop of ice cream and a light drizzle of caramel sauce.
Alternatively, pour 1/2 cup of melted butter in an even layer in the bottom of a baking dish. In a separate bowl, stir together 1 cup flour, 1 cup sugar, 1 tablespoon baking powder, a pinch of salt and 1 cup milk. Stir the batter together until the dry ingredients are moistened. Pour the batter over the melted butter.
In a small saucepan, combine 4 cups of sliced fresh peaches, 1 tablespoon lemon juice and 1 cup of granulated sugar. Bring the mixture to a boil over high heat before pouring the hot peaches over the batter. Do not stir the ingredients. Sprinkle the top of the cobbler with cinnamon and nutmeg, if desired, and bake the dish for approximately 45 minutes at 375 F.
