To make oyster stew, saute 2 chopped green onions in 2 tablespoons of butter in a large pot. Add 12 ounces of fresh raw oysters that have not been drained, 1 quart of half-and-half or whole milk, 1/4 teaspoon of salt, 1/4 teaspoon of white pepper and 1/8 teaspoon of cayenne pepper. Cook these ingredients slowly over low heat, stirring frequently. The soup is done when the edges of the oysters begin to curl. Avoid burning the bottom of this soup by stirring often and keeping the heat low.
Serve this stew with crackers and a garnish of sliced green onions. Home cooks who reviewed this recipe gave it high marks, saying that it was very easy to prepare and tasted good. Some suggested adding a few cloves of chopped garlic and a chopped shallot for more flavor. Others added potatoes, allowing them to soften fully before serving the soup.
