To make Cranberry Orange Loaf, preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9 by 5-inch baking pan. In a bowl, combine 2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt, whisking the ingredients together. Stir in 1 tablespoon of grated orange zest, 1 1/2 cups of fresh cranberries and 1/2 cup of coarsely cut pecans. Set the mixture aside.
Next, in a large bowl, combine 1/4 cup softened margarine, 1 cup sugar and an egg, creaming until smooth. Add 3/4 cup of orange juice, then add the flour mixture, beating until barely moistened. Pour the combination into the pre-greased pan.
Bake the cake for one hour, or until the bread is springy to touch. When done, let the cake stand for 10 minutes, and then cool it on a wire rack. Once it is completely cool, wrap it in plastic wrap until ready to serve.
