To make Taste of Home's old-fashioned sweet potato casserole, put 4 pounds of peeled and diced sweet potatoes in a large saucepan. Add water, ensuring that it covers the potatoes, and bring to a boil. Cook for 15 minutes under medium heat, or until the potatoes are tender. Drain all the water.
Mash the potatoes in a large bowl. Add 1 cup of milk, 1/2 cup brown sugar, 6 tablespoons of butter and 1 slightly beaten egg. Stir in 1 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, 1/2 teaspoon allspice and 1/4 teaspoon nutmeg. Season with 1/2 teaspoon of salt. Thoroughly combine all ingredients.
Put the mixture in a shallow baking dish, and bake uncovered for 45 minutes at 350 F. Top with 18 marshmallows, and bake for eight to ten minutes. Remove when the marshmallows start to puff.
Substitute a pecan topping for the marshmallow topping by combining 3/4 cup brown sugar, 1 cup chopped pecans, 3/4 cup all-purpose flour and 5 tablespoons melted butter. Pour this mixture over the mashed sweet potatoes and bake for 50 minutes.
