To make the funnel cake, combine 1 1/3 cups flour, 3/4 teaspoon baking powder, 1/4 teaspoon salt and 1/2 teaspoon baking soda. Separately, whisk together one beaten egg and 2 tablespoons sugar, and then add in 1 cup milk. Gently stir the egg mixture into the dry ingredients to make a batter that is thicker than pancake batter. Add more milk if the batter is too thick to pour.
Heat about 2 inches of canola oil in a large skillet until a deep-fry thermometer reads 375 degrees Fahrenheit. Hold a finger over the hole of a funnel, and pour 1 cup batter into the funnel. Hold the funnel over the skillet and remove the finger, allowing the batter to form a spiral pattern in the oil. Cook the funnel cake for about 30 seconds until it floats, and then flip it over and cook the other side for an additional 30 seconds. Remove the cake from the oil, and repeat the process for the remaining batter.
Sprinkle the funnel cakes with a mixture of 1 cup powdered sugar and 1 teaspoon cinnamon. The funnel cakes may also be served with whipped cream or fruit sauce.
