An easy recipe for making chicken mole includes making a chili pepper and chocolate sauce and adding precooked chicken to the sauce. Other ingredients in mole sauce are onions, garlic, peanut butter and dried oregano.
To make an easy chicken mole, first start by soaking five dried pasilla chili peppers in 1 1/4 cups of warm water for 15 minutes. Drain well, discard the soaking liquid and set to the side. Heat 2 tablespoons of olive oil in a large saucepan, and cook 2 cups of chopped onions with two minced cloves of garlic until translucent. Transfer onions and garlic to a blender along with the chili peppers, 5 1/2 ounces of Mexican chocolate, 1 3/4 cups of chicken broth, 3 three tablespoons of peanut butter, 1 tablespoon of sugar, 1 teaspoon of crumbled dried oregano and two corn tostadas. Blend all the ingredients until very smooth.
Once fully blended, transfer sauce to a saucepan and bring to a boil. Bring the heat down to medium and cook for 20 minutes while covered. Season to taste with salt and pepper, and add pieces of baked or rotisserie chicken. Stir well to combine. This dish is best served hot over white rice.
