To make a low country shrimp boil from Hilton Head Island, prepare the ingredients: 2 pounds of jumbo shrimp, 8 to 16 halves of corn ears and 2 pounds of sausage. Additionally, gather 1 box of shrimp seasoning, 4 sliced lemons and cocktail sauce for dashing, dipping and sprinkling. This recipe is designed to serve 8 people, and you can serve it with bread or crackers.
Begin by getting a large pot and filling it up with 8 quarts of water. Add the lemon slices to the water, and bring the water to a boil. Throw in the shrimp seasoning, and add the sausages. Cook them in the boiling water for approximately 5 minutes, and then add the corn halves and cook for another 10 minutes.
After the corn is done, add the shrimp to the mix, and cook it until it is just pink, which occurs after 3 minutes. Make sure to not overcook the shrimp, as it still cooks when it is out of the pot. Once the shrimp is done, simply drain the pot of the water, and serve the boil hot. Use the cocktail sauce for dipping, or add other condiments to the mix, such as hot sauce, horseradish, ketchup or Worcestershire sauce.
