An easy jambalaya recipe consists of 2 cups of white rice, 1 pound of boneless chicken, 3/4 pound of andouille, an onion and a few other ingredients. This recipe takes 30 minutes to prepare and serves four people.
To make the jambalaya, prepare the rice according to the package directions. Then, in a large skillet over medium-high heat, add 1 tablespoon of extra virgin olive oil and 1 tablespoon of butter. Cut the chicken into small cubes, and place the cubes into the hot pan. Cook the chicken for about three minutes, add the diced andouille, and cook the chicken for two more minutes. Add 1 chopped onion, 2 chopped celery ribs, 1 chopped green bell pepper, 1 bay leaf and 2 pinches of cayenne pepper.
Next, saute the vegetables for about five minutes, and then sprinkle 2 tablespoons of flour in the pan. Add one can of diced tomatoes, 1 teaspoon cumin, 1 teaspoon chili powder, 1 teaspoon poultry seasoning and 1 teaspoon Worcestershire sauce.
Bring the mixture to a boil, and add 1 pound of raw shrimp. Cook the dish for about five more minutes. Remove the pan from the heat, and ladle the jambalaya into four bowls. Place a scoop of rice on top of the jambalaya, and season it with your preferred spices.
