The ingredients for this recipe include 12 ounces of butter, 1 3/4 cups of white sugar, six eggs, 1 teaspoon anise extract, 2 teaspoons vanilla extract, 6 cups of all-purpose flour, 1/2 teaspoon salt, 2 teaspoons baking powder and 8 ounces of chopped almonds.
Preheat the oven to 350 degrees Fahrenheit. Meanwhile, in a large bowl, stir the butter and sugar together. Add the eggs one at a time and beat them until they are fluffy. Stir in the anise and vanilla extracts. Sift together the flour, baking powder and salt. Add these ingredients to the egg mixture along with the chopped almonds, and stir with a spoon. A dough starts to form over time.
Knead the dough gently by hand. Divide the dough into four parts, and roll each piece into a log about 15 inches long. Place the logs onto cookie sheets. Flatten the logs out until they are about 3 inches wide with a slight hump going down the middle. Bake the biscotti for 25 to 30 minutes.
Cut the loaves into diagonal slices 1/2 inch wide, place the slices onto the cookie sheets and return them to the oven. Toast on one side, then turn them over to do the other side and allow to bake for about seven minutes, until they are golden brown.Learn more about Cooking
