An easy recipe for making homemade sausage includes 1 pound of ground pork and several spices, such as minced garlic, dried fennel, sage and thyme. Additional spices include coarse salt, pepper and a pinch of nutmeg. Mix the pork and seasonings with 1 egg white and chill for 15 minutes.
To form patties out of the homemade sausage mixture, wash hands in cold water and divide the mixture into two sections. Shape the pork mixture into round patties about 2 inches thick. Refrigerate the patties, or immediately cook them over high heat in a skillet pan. A recipe for homemade breakfast sausage uses 2 pounds of butt pork, which must be diced, and 1/2 pound of diced fatback. This recipe includes cayenne pepper, rosemary and brown sugar, and requires the use of a meat grinder.
To make homemade Italian sausage, combine 3 pounds of marbled pork butt with garlic, fennel seeds, anise and parsley. Add 3 tablespoons of dry red wine to the mixture and refrigerate overnight.
