Libby's famous pumpkin pie is an easy pumpkin pie recipe. The recipe takes 15 minutes to prepare and makes eight servings. Some ingredients include pumpkin, eggs, evaporated milk, sugar and cinnamon.
Begin making Libby's famous pumpkin pie by combining 3/4 cup of sugar, 1 teaspoon of ground cinnamon, 1/2 teaspoon of salt, 1/2 teaspoon of ground ginger and 1/4 teaspoon of ground cloves in a small bowl. In a large bowl, beat 2 eggs, then stir in a 15-ounce can of pumpkin and the sugar and spice mixture. Gradually add a 12-ounce can of evaporated milk, and stir to combine.
Pour the pumpkin mixture into an unbaked 9-inch deep-dish pie shell. Bake in a 425 F oven for 15 minutes, then reduce the oven temperature to 350 F, and bake for an additional 40 to 50 minutes. The pie is done when a knife inserted into the center comes out clean. Allow the pie to cool for 2 hours, then serve or refrigerate. If desired, top the pie with whipped cream before serving.
To make an easy no-roll pie crust, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, 1 teaspoon of sugar and 3/8 teaspoon of baking powder. In a separate bowl, combine 7 tablespoons of oil and 1/4 cup of cold water, and pour over the dry ingredients. Stir the dough with a fork until it is evenly moistened, then press into the bottom and up the sides of a 9-inch pie plate.
