To make easy homemade apple juice, peel and core 3 red apples. Remove the seeds from the cores, and boil the peels and cores in 5 cups of water for 30 minutes. Strain the solids from the juice, and mix in 1/4 cup of white sugar. Mix the juice thoroughly, and allow it to cool before refrigerating. Serve the juice chilled.
Alternatively, simply use a juicer to extract the juice directly from apples. Slice up a few apples to fit into the opening of the juicer. Follow the juicer's operating instructions to fill a cup with apple juice. Discard the resulting pulp. Refrigerate the juice and serve it chilled.
If desired, extra flavor may be infused by adding spices to the juice. In a medium-sized saucepan over medium-high heat, whisk together 2 cups of the apple juice, 3 tablespoons of caramel syrup, 1 teaspoon of ground cinnamon and 1/2 teaspoon of ground nutmeg. Allow the mixture to get hot but not to the point of boiling. After three minutes, add 1/4 teaspoon of vanilla extract, stir, and heat for 1 minute. Carefully pour the drinks into mugs. The drinks may either be served immediately or chilled. Top with whipped cream and sprinkle with cinnamon for added flavor and presentation.
