Make an easy ham casserole by heating 1 tablespoon oil in a large saucepan set over medium-high heat. Add 2 cups cubed cooked ham and 1/2 cup chopped onion. In a separate pot, cook 2/3 package of egg noodles according to the package directions. Drain, and set the noodles aside.
Once the onions are softened, stir in 1 can condensed cream of mushroom soup, 2 cups shredded cheddar cheese, and the cooked egg noodles into the ham mixture. Stir the ingredient to combine them together, and simmer the mixture until the cheese is melted and the stovetop casserole is bubbly.
Alternatively, make a ham and potato casserole by simmering 2 cups cubed potatoes with chopped carrot, chopped celery and 3 cups water. Simmer mixture for 15 minutes, and drain the potatoes. Sauté 2 cups of cubed, cooked ham with chopped bell pepper and chopped onion in 3 tablespoons butter. Add the cooked vegetables to the potato mixture, and transfer it to a greased baking dish.
Melt 4 tablespoons butter before whisking in 3 tablespoons flour. Add 1 1/2 cups milk, 3/4 teaspoon salt and 1/8 teaspoon black pepper. Bring the liquid to a boil, and cook it until it's thickened. Add 1 cup shredded cheese, and pour the milk mixture over the ham and potatoes. Sprinkle the top of the casserole with 1/2 cup bread crumbs, and bake it for 25 to 30 minutes at 375 degrees Fahrenheit.
