Southern Living offers an easy recipe for green tomato relish that calls for red bell pepper, poblano pepper, onion, carrots and green tomatoes. Green tomato hot dog relish is another easy recipe that uses pickling spices.
To make green tomato relish, remove the seeds and membranes from 1 red bell pepper and 1 1/2 pounds of green quartered tomatoes. In a pot, add the tomatoes and pepper, 1 sliced white onion, 1 cup of carrots cut into matchsticks, 1/2 cup of water and 1 cup of distilled white vinegar. Bring the mixture to a boil, and then reduce the temperature and simmer for 30 minutes. Drain the juice from the pot, and mix in 1 cup of sugar and 1 cup of vinegar along with 1 tablespoon of salt, 1 tablespoon of mustard seeds, 1/4 teaspoon of ground turmeric, 1/8 teaspoon of ground cloves and 1/8 teaspoon of ground allspice. Bring the relish to a boil again, and simmer for five minutes before cooling it completely.
To make green tomato hot dog relish, place 2 tablespoons of mixed pickling spices and 1/2 teaspoon of celery seed in a cheesecloth, and tie it shut. Place the spices in the mixture as you cook the relish.
