Mix 5 cups of all-purpose flour with 1 teaspoon of baking soda and 3/4 teaspoon of salt in a large bowl. Stir in 1 tablespoon of ground cinnamon, 2 teaspoons of ground ginger, and 1/2 teaspoon each of ground nutmeg and ground cloves. Use an electric mixer to cream 2 sticks of softened unsalted butter with 1 cup of light brown sugar and 1 large egg in another bowl. Beat in 1 cup of unsulfured molasses and 1 teaspoon of vanilla extract.

Bake the gingerbread men at 350 degrees Fahrenheit for approximately 12 minutes or until they are firm.
