To make fruitcake cookies, first toss 3 cups of chopped pecans, 1 8-ounce package of chopped dates, 1 8-ounce packaged of chopped candied pineapple, 1 4-ounce package of chopped candied red cherries and 1 4-ounce package of chopped candied green cherries with 1 cup of flour. In a separate bowl, cream together 1/2 cup of softened butter and 1 cup of brown sugar, and then add 2 eggs. In a cup, stir 2 tablespoons of buttermilk with 1 teaspoon of baking soda until the baking soda dissolves.
Stir a flour mixture made of 1 cup of flour mixed with 1/2 teaspoon each of ground cinnamon, allspice and nutmeg into the egg mixture in parts, alternating with the buttermilk mixture and 2 tablespoons of rum. Finally, fold in the candied fruit. Drop the dough onto cookie sheets, and bake the cookies at 325 degrees Fahrenheit for 12 minutes.
Another recipe uses chopped mixed nuts instead of pecans and adds in 2 cups of chopped raisins in addition to the rest of the fruit. The Food Network recipe calls for dried figs and apricots as well as candied cherries, raisins and pecans.
