To make these fish cakes, process 500 grams of boneless white fish fillets chopped roughly, 3 trimmed and sliced green onions, 1 tablespoon of chopped dill, 2 1/4 cups of breadcrumbs and 1 egg until nearly smooth. Season the mixture with salt and white pepper. Use 1/4 cup of this mixture for each of the 8 patties. Place on a tray with baking paper, cover them and refrigerate. Heat 1 tablespoon of olive oil in a large nonstick frying pan on medium to high heat. Add 4 patties to the pan, and cook for 3 minutes on each side or until they are golden. Then repeat this with the remaining 4 patties. This recipe serves four.

To make these fish cakes, peel and cut up 5 large potatoes, place in a pot with 1 pound of boneless fish fillets, cover with cold water and boil until the potatoes are soft, and then drain the water. Mash the potatoes with the fish. Mix together 3 tablespoons of chopped onions, 2 eggs, and 1 tablespoon of water, and then add this to the fish and potatoes, mixing well. Make hamburger sized patties from this mixture, season with salt and pepper and fry in a greased skillet until they are golden brown on both sides. This recipe serves two to three.
