Creamy Potato Soup
This soup is ideal for warming up chilly evenings. It requires just a few basic ingredients and is easy to make.

- 7 peeled and cubed potatoes, medium
- 2 diced celery ribs
- 1 medium chopped onions
- 1 quart water
- 4 teaspoons chicken bouillon granules
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 quart milk
- Shredded cheddar cheese
- Sour cream
- Combine ingredients
- Puree mixture
- Add finishing touches
Combine the potatoes, onion, celery, bouillon and water in a kettle or Dutch oven and bring the mixture to a boil. Reduce heat, cover the kettle, and simmer the ingredients until potatoes are tender, or around 25 minutes.
Allow the mixture to cool slightly, and then remove half of the mixture and place it in a blender. Puree the first half, set it to the side, and then puree the second half.
Melt the butter in the same kettle, and then stir in the flour and the salt and black pepper. Stir until smooth. Add milk gradually and bring the mixture to a boil. Stir while boiling for 2 minutes. Add the potato puree back to the kettle. Heat thoroughly, and then garnish as desired and serve.
