An easy recipe for cranberry Jell-O salad is Kraft's Festive Jell-O Cranberry-Pineapple Salad. The recipe uses crushed pineapple, whole berry cranberry sauce, strawberry Jell-O, a pear and walnuts.
To make Kraft's Festive Jell-O Cranberry-Pineapple Salad, drain 1 20-ounce can of crushed pineapple, making sure to save the juice. Add cold water to the reserved pineapple juice until the mixture totals 3 cups of liquid. In a saucepan, bring the mixture to a boil. Stir the hot juice mixture into 2 packages of strawberry Jell-O for two minutes. Add 1 16-ounce can whole cranberry sauce to the Jell-O mixture, and then refrigerate for at least an hour and a half.
After refrigerating, add in 1 pineapple, 1 chopped pear and 2/3 cup chopped walnuts. Refrigerate the salad for four more hours before serving. For more of a cranberry flavor, swap cranberry Jell-O with the strawberry Jell-O. To make a lighter version of the Jell-O salad, use sugar-free Jell-O.
Garnish the salad with some reserved pineapple or an additional chopped pear. Alternatively, finish the salad with a homemade whipped topping by mixing together 1 8-ounce package cream cheese, 1/4 cup powdered sugar, 2 tablespoons whipped cream and 1/4 cup walnuts. To form a molded salad, use a 6-cup mold instead of a serving bowl.
