Easy Chocolate Pound Cake
Once cooled, this cake is ideally served with a scoop of vanilla ice cream. This recipe yields 12 servings

- 1 cup butter, room temperature, plus extra to grease the pan
- 3 cups all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup cocoa
- 1/2 cup vegetable shortening
- 3 cups sugar
- 5 large eggs, room temperature
- 1 cup milk
- 2 tsp. vanilla extract
Step 1: Heat the oven to 350 F and grease a 10-inch tube pan with butter.
Step 2: Sift the dry flour, baking powder, salt and cocoa together in a bowl and set aside.
Step 3: Cream the butter, vegetable shortening and sugar to a fluffy texture and add gradually beat in the eggs. Alternately beat in the sifted dry ingredients and milk until combined, then add the vanilla extract.
Step 4: Pour the cake mixture into the pan and bake for 1 hour. At the end of the cooking time, insert a toothpick to test whether the cake is done. If the toothpick comes out clean, remove the cake from the oven and let it cool in the pan for around 30 minutes. Then turn it out of the pan and place on a wire rack to cool completely.
