An easy recipe for moist chocolate muffins combines basic ingredients such as all-purpose flour, sugar and vanilla with unsweetened cocoa powder, chocolate chips, yogurt and milk. Fudgy chocolate chip muffins are made moist using applesauce and margarine.
Grease 12 muffin cups with cooking spray or muffin liners made of paper. In a large bowl, combine 2 cups all-purpose flour, 1 cup white sugar and 3/4 cups chocolate chips with 1/2 cup unsweetened cocoa powder. Add in 1 teaspoon baking soda and 1 teaspoon vanilla extract, blending well. In a separate bowl, whisk together 1 egg, 1 cup plain yogurt, 1/2 cup milk and 1/2 cup vegetable oil, blending until smooth. Gradually pour yogurt mixture into the chocolate mixture, stirring constantly until just blended.
Fill two-thirds of each muffin cup with mixture, and sprinkle 1/4 cup chocolate chips on top. Bake for 20 minutes at 400 degrees Fahrenheit.
Make fudgy chocolate chip muffins with applesauce. In a large bowl, beat 1/4 cup softened margarine, 1/2 cup white sugar, 1/2 cup light brown sugar with 1 egg and 1/2 teaspoon vanilla extract. Stir in 1/2 cup applesauce and blend well. In another bowl, combine 1 cup all-purpose flour with 1/4 cup unsweetened cocoa powder, 1/2 teaspoon baking soda and an optional 1/4 teaspoon ground cinnamon. Combine chocolate mixture with applesauce mixture, and then stir in 1 cup semi-sweet chocolate chips.
Fill muffin cups up to three-quarters with mixture, and bake for 22 to 26 minutes at 350 degrees Fahrenheit.
